dc.description.abstractTraine dietitian interviewed 136 cases histologically diagnosed with gastric cancer and the same number of sex and age-matched controls by using quantitative food frequency questionnaire. Nitrate/nitrite values used in this study were taken from data analyzed by Kim and Yoon(2003) in Korea. High intake of antioxidant vitamins may contribute to the lessening of GC risk by countereracting the effect of nitrate. Therefore, th affluenct intake of various foods, especially fresh vegetables and fruites containing a high level of antioxidants and other benericial ingredients, is a key to prevent the incidence of gastric cancer.-
