- Abstract
- Horse oil is very similar to human skin because of a large amount of unsaturated fatty acids. Different methods of animal oil extraction could be effective on the yield and chemical composition
of obtained oil. This study was aimed to evaluate the yield and fatty acid composition from abdominal muscles in horse, pig and cow. The purpose of the present study was the evaluation of
the effect of 2 methods, namely enzymatic extraction method (EM) and autoclaving method (AM) on the yield of extracted oil from animal, as well as the chemical parameters such as free fatty
acid profiles and acid value. The yield rate showed that the amount of obtained oil by EM and AM methods were significantly higher than the other methods (p < 0.05). Among the analyzed fatty
acids of the oil obtained from the three kinds of animals, the composition levels of Palmitoleic acid (n-7) in Horse oil was 7.0%, which is higher (P < 0.05) in compared with them in the Lard and
Tallow (p > 0.05). Therefore, it can be stated in general that the results of this study indicate the appropriate potential to extract Horse oil for human consumption. Considering the features of the
EM method, it can be considered a suitable method for Horse oil extracting.
