- Abstract
- 항공산업을 중심으로 도입된 수익관리(revenue management or yield management)는 서비스산업의 특성인 소멸성 자산을 적시에 적절한 가격으로 고객에게 제공함으로써 최대한의 이익을 창출하려는 경영기법이라고 할 수 있다(Lieberman, 1993; Quain et al., 1999). 이러한 수익관리 개념은 호텔 및 여행업 등 유사한 상품 특징을 갖는 다양한 분야로 점차 확대되어(윤문길, 김후곤, 윤덕영, 2002), 최근에는 레스토랑 산업에서도 관심을 받게 되었다.
The study considers the table mix and table assignment problems of restaurants. The objective of the study is to maximize the revenue of restaurants by optimizing the table mix and assignment policy. The new table mix model considering table size factor which is not exactly proportional to the size of the party is developed. A zero-one integer programming model is also developed to get integral numbers. Two experiments are performed. In the first experiment, to evaluate the proposed tablemix, A restaurant's current tablemix is compared with the proposed w.r.t RevPASH. The results show that in all cases the proposed model is better than A restaurant's. In the other experiment, two assignment rules are considered to grasp the effects on revenue according to degree of restaurant's busy rate and various restaurant sizes. The simulation model coded in Microsoft Visual Basic 6.0 is used to measure the performance of two assignment rules w.r.t RevPASH. 5,400 simulation data are used and test results show that in most cases FCFS rule is better than the matched party size rul
